I have gotten so much better these past few years with not only basic cooking but branching out and trying new things with a healthy twist.
I found a recipe earlier this year on how to cook basic chicken on the stovetop. And let me tell you, it's so easy! I can't remember the exact place I got this recipe, but here it is!
It's easier to do it with thinner chicken breasts or tenders but it's doable with thicker cuts too.
Ingredients:
A package of chicken tenders or breast fillets
Extra virgin olive oil
Kosher salt
Pepper
coat the chicken with oil on one side and salt and pepper it. Lay it oil side down on your pan then coat the other side with oil and salt and pepper. Here's an important part. Your burner is not turned on yet!
Then turn the burner on to a high heat and cover the pan with about an inch or so opening.
After you get a good sizzle going, turn the heat down to a medium and cook for about 4-5 minutes. DONT keep taking the lid off to check, just let it be.
After about 5 minutes you will see the chicken is already more than halfway cooked through.
Flip it, cover with lid while leaving the 1 inch opening and cook another 5 minutes.
Then turn the heat completely off and let it sit, covered for 10 minutes to finish.
So easy! And depending on what you're using it for, you can add whatever seasonings of your choosing. This particular chicken I added cumin, garlic powder, and chili powder because we added it to quesadillas.
Or if you're cooking it to have on hand for whatever throughout the week, season with salt, pepper and a basic chicken seasoning.
Simple, fast and so versatile!
