If you love avocado and egg, you'll love this! I love finding healthy alternatives for some of my favorite foods. I hate not being able to eat a certain type of food because I'm not able to experiment. I like egg salad but it was never really something I craved. But I do LOVE avocado and anytime I can try something new with avocado, I'm all for it!
This is super simple, easy, good and guilt free!
*Note, I buy organic already hard boiled eggs from Costco. I love hard boiled eggs and although it is super easy to do, I never seem to find the time to hard boil them myself. So this is the next best thing!
Ingredients:
-->half of an avocado
-->2 hard boiled eggs
--> a splash of lemon juice
-->salt
--> pepper
That's it folks!
Directions:
Mash the avocado with a fork and add a splash of fresh lemon juice and mix. Cut up 2 hard boiled eggs and mix in with the avocado. Add salt and pepper to taste. I've used a 1/4 of a large avocado before and it worked just as well too! Just depends on if you like more avocado or not!
I topped it on toasted Udis bread.
This makes enough for 2 servings.
