Meal preppin it up

I have a love/hate relationship with meal prep lol. Since I started doing it, I love how easy it is to get dinner ready and have snacks ready quickly. Makes life so much easier! HOWEVER, doing the actual meal prep sometimes is tedious. But I always remind myself that it's better in the long run! So I keep doing it.

Since the refresh threw my week off (I usually prep on Sundays), I did some middle of the week prep. I love making turkey taco meat and seasoned grilled chicken to have for whatever. Then I made some dump ranch (dairy free), which is amazing by the way. 
Turkey taco meat-
I had some leftover red peppers and red onion from the refresh that I sautéed and added to the taco meat.


 
I used to use a seasoning packet of taco seasoning but when i realized it had whey in it, I stopped and just use my own seasoning. Usually consists of salt, pepper, onion and garlic powder, chili powder, cumin and cayenne pepper. 
We used it for turkey taco bowls for dinner, which is a good go to on a work night!

Seasoned chicken-
I learned a new way to make it that I love! 

I start off by putting a little bit of olive oil in a COLD pan, yes I said cold ; ) then add the chicken. I like to use chicken tenders or smaller chicken breasts since it cooks a bit faster. I rub some olive oil over the tops facing up and season with salt, pepper, onion powder and garlic powder. If you're going for more of a Mexican meal, you can add cumin, chili powder, cayenne pepper. But I like to do this so I can use it on almost anything. 


Then I cover it so there is like an inch opening, and turn it up to medium high heat till I hear a sizzle going. Then I turn it down to just medium and cook for 5 minutes. I then flip them, season the other side, cover the same way and cook for an additional 4-5 minutes.

I then make sure it's cooked all the way through, turn the heat off, cover it completely, and let it sit for 10 minutes to finish cooking.

The result is amazingness! 
I should say that I did get this recipe off Pinterest, and can't take credit for it! However don't remember which site it came from. So thank you whoever you are for this recipe!

I also made dump ranch since I had left over cilantro, but will do another post on that. That deserves a post on its own!
